Description

A unique blend of Polish pierogi and Italian lasagna, this dish is a comforting explosion of flavors and textures, perfect for family gatherings or cozy nights in.

Ingredients

Scale
  • 4 large potatoes, peeled and sliced thinly
  • 2 cups of cheese (mix of mozzarella, cheddar, or alpine cheese)
  • 2 onions, chopped
  • Fresh herbs (parsley or dill)
  • Bacon (optional)
  • Mushrooms (optional)
  • 2 tablespoons oil

Instructions

  1. Peel the potatoes and slice them thinly for even cooking.
  2. Heat oil in a pan and add the onions, cooking until golden brown, about 5-7 minutes.
  3. Layer a baking dish with a layer of potato slices, covering the bottom.
  4. Sprinkle cheese and golden onions in between the potato layers; repeat until all ingredients are used.
  5. Add fresh herbs, and optional bacon or mushrooms, between the layers for added flavor.
  6. Finish with a final layer of cheese on top.
  7. Bake in a preheated oven at 180°C (350°F) for 40-45 minutes until potatoes are tender and cheese is golden brown.
  8. Let the lasagna rest for 10 minutes before serving to allow the flavors to meld.

Notes

You can prepare the lasagna a few hours in advance and refrigerate it to enhance flavors. Consider using an air fryer for a crispier top.
