Description

This crustless quiche combines creamy cottage cheese, fresh baby spinach, and tangy cheddar for a delightful dish perfect for any mealtime.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper (optional)
  • 300 g fresh baby spinach
  • 250 g cottage cheese
  • 5 large eggs
  • 150 g shredded cheddar cheese
  • 100 ml milk
  • 1 tsp garlic powder
  • 1 tsp Italian herbs
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the diced onion and bell pepper, sauté until soft and onions are golden brown (about 5 minutes).
  3. Stir in the baby spinach and cook until wilted. Allow the mixture to cool.
  4. In a large mixing bowl, whisk together the eggs, cottage cheese, milk, garlic powder, Italian herbs, salt, and pepper.
  5. Incorporate the cooled vegetable mixture and shredded cheese, mixing well.
  6. Pour the mixture into a greased quiche or baking dish and bake at 180°C (350°F) for about 30-35 minutes, until the quiche is set and golden brown.
  7. Let the quiche cool for a few minutes before slicing and serving.
