- 1 tbsp olive oil
- 1 onion, diced
- 1 bell pepper (optional)
- 300 g fresh baby spinach
- 250 g cottage cheese
- 5 large eggs
- 150 g shredded cheddar cheese
- 100 ml milk
- 1 tsp garlic powder
- 1 tsp Italian herbs
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the diced onion and bell pepper, sauté until soft and onions are golden brown (about 5 minutes).
- Stir in the baby spinach and cook until wilted. Allow the mixture to cool.
- In a large mixing bowl, whisk together the eggs, cottage cheese, milk, garlic powder, Italian herbs, salt, and pepper.
- Incorporate the cooled vegetable mixture and shredded cheese, mixing well.
- Pour the mixture into a greased quiche or baking dish and bake at 180°C (350°F) for about 30-35 minutes, until the quiche is set and golden brown.
- Let the quiche cool for a few minutes before slicing and serving.
