A creamy and nutritious chocolate chia protein pudding that’s versatile and satisfying.
Ingredients

- 1/2 cup chia seeds
- 2 cups milk or plant-based milk
- 1/4 cup unsweetened cocoa powder
- 2–4 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup protein powder
- 1 pinch of salt
Instructions
- Pour the chia seeds into a large bowl and add the milk or plant-based milk. Stir well to ensure the chia seeds are evenly distributed and no clumps form.
- Sprinkle the cocoa powder, honey or maple syrup, vanilla extract, protein powder, and a pinch of salt over the mixture. Stir all the ingredients thoroughly until well combined.
- Let the mixture sit in the refrigerator for at least 2 hours or preferably overnight. This allows the chia seeds to absorb the liquid and achieve the perfect consistency.
- Before serving, give the pudding another good stir to ensure there are no clumps. Garnish as desired with fresh fruits, nuts, or a sprinkle of coconut flakes.
Notes
For a creamier texture, prepare the pudding a day in advance. Blend the mixture in a blender for an ultra-smooth consistency.
