Description

Delicious and healthy protein-packed muffins with a sweet cinnamon twist, perfect for breakfast or a snack.


Ingredients

  • 1 cup vanilla protein powder
  • 1 cup almond flour
  • 0.25 cup coconut flour
  • 1 cup Greek yogurt
  • 0.5 cup almond milk
  • 2 eggs
  • 0.25 cup melted coconut oil
  • 0.25 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.25 cup coconut sugar
  • 1 tsp additional cinnamon
  • 0.25 cup powdered monk fruit sweetener
  • 2 tbsp almond milk (for consistency)

Instructions

  1. Preheat your oven to 180°C and line a muffin pan with liners or grease it lightly.
  2. Mix in a large bowl the protein powder, almond flour, coconut flour, baking powder, cinnamon, salt, and coconut sugar.
  3. Whisk in a separate bowl the eggs, Greek yogurt, almond milk, melted coconut oil, and maple syrup until well combined. Add the optional vanilla extract.
  4. Combine the wet ingredients with the dry ingredients. Mix until just combined, being careful not to overmix.
  5. Mix the additional cinnamon with the powdered monk fruit sweetener in a small bowl for the filling.
  6. Distribute the muffin batter evenly into the liners, and sprinkle the cinnamon filling over the top, swirling it in gently with a fork.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

Feel free to experiment with different mix-ins like nuts or dried fruits.
